Take Out Tuesdays-Holiday Edition: a Healthy Strategy for Christmas Dinner


The holiday season is a time of lots of merriment and spending cherished moments with family and friends. For most, this centers around a lot of food & drinks. We plan our family gatherings around what it is to be served and when. 

For me, this means waking up on Christmas morning at my Mamaw's in Indiana and preparing our customary Christmas breakfast of Monkey bread & Lumberjack eggs (a scrambled egg & ham dish). Once the breakfast is complete, we quickly clean up, and proceed to quickly move on to preparing our Christmas dinner. 

For my family, food is a way of showing our love for one another. In fact, this year, I have even given out many  homemade recipes to family and friends, such as the PB Sweet & Salty granola recipe & the Red Velvet Cupcakes with Cream Cheese Frosting recipe that was served in mason jars. I believe that food & the holidays go hand and hand because they can both provide us with the "homey," comfort feeling we all desire to experience again from our childhoods.

Therefore, I think it is very important to not be fearful of celebrating the holiday season with food. So what if you have one cupcake? As someone who grew up struggling with their weight, I can tell you firsthand that I was the heaviest when I deprived myself of certain foods. These past five years, I have maintained a healthy weight by living a healthy lifestyle, heavy on the LIFE.

 Below are 10 easy & straightforward tips to help you to enjoy a healthy Christmas Dinner & New Year's Eve...

Healthy Tip #1: Eat a Snack Before You Go.
 Do not arrive feeling famished. Instead, eat a healthy snack before you arrive, that is fibrous and protein-rich. My go to pre-dinner snack is an apple with peanut butter or almond butter. 

Healthy Tip #2: "Host Assist"
 Offer to help the party-host serve drinks, prepare food, or with whatever help they need. This way you can spend less time feeling tempted to eat the food. Perhaps, this is just a matter of positioning yourself away from the snacking table. For me, this would mean not sitting right in front of the big bowl of Christmas-colored M&Ms, because I know they would be calling my name.

Healthy Tip #3: Wear Your Sunday Best
 Avoid the elastic leggings/jeggings etc. and big, oversized sweater that will provide you with the room to eat like its Thanksgiving all over again. When your clothes fit to your body you can be more aware of when you are full & less likely to go HAM. (I often use this trick when working out, particularly yoga. By practicing yoga, in a tighter tank, I am able to become more aware of my body's movement and alignment). 

                           Healthy Tip #4: Use an Appetizer Plate for your Meal
Have you experienced this scenario before? You go into a grocery store just to buy  a few items, but grab a shopping cart anyway.Suddenly, you find yourself stocking up on a heck of a lot more than you originally intended. However, if you had gone into the grocery store and used a shopping basket, you would have been much more selective and aware of exactly what you wanted. The same things occur when you eat your dinner on a large plate versus a small plate. By using a small plate when choosing your foods, you are much more aware of just how much of the mashed potatoes you are scooping out onto your plate.

                                   Healthy Tip #5: Be Picky
Prior to arriving, think about what type of food you are most looking forward to. Is it your grandmother's wedding cakes, aunt's homemade biscuits, or uncle's famous ham? Determine what food you know you "have to" eat and be honest about it.This way you will have a clear plan for what you want to consume. For example, by identifying the biscuits as a necessary item on your list, you can develop a plan to consume just  just one biscuit. Such a plan will not only make that biscuit more delectable, but it will also place the control of your consumption in your hands, literally. 

                                 Healthy Tip #6: Move On
Whether you are sitting down at a formal table or forming a line around a buffet-style table, put a little bit of the foods you want on your plate and move on. Eat each food once, and enjoy it. Once its over, move on to enjoying your company, or helping with the clean-up.

Healthy Tip #7: Be Last in Line 
This is a tip that I tend to follow, whether at a wedding or even at a store at the mall. You know how a store at the start of Christmas season can look so pristine and beautiful? You see all of these beautiful and flashy items lined up in front of you when you walk into the store. As your eyes drift over each good, you mentally add each item to your list. However, if you went back to the store the day after Christmas when everything is marked down to 75%. You notice that the boxes look slightly squished and that a heated towel warmer is not something you really need, even when priced for only $3.  This is the same occurrence that happens when you are gathered around a buffet-style table for Christmas dinner. You begin to salivate as you look down at all of the delicious food laid out so beautifully onto crisp linens. However, once the meal has received many "spoon-mark beatings" your mind becomes much clearer and you are be able to decipher which foods you actually want prior to sampling.

Healthy Tip #8: Drink & Stay Merry
 Make water your drink of choice. If you want to consume alcohol, alternate 2 glasses of water for 1 alcoholic beverage. Skip the soda entirely. In particular, the artificial sweetener in Diet Soda, will make you crave more sweets. Club soda & lime make great drink mixers. 

Healthy Tip #9: Bring Something Healthy
Whether you stop at the grocery store on your way for a veggie platter or bring a wine spritzer, you can be better prepared for the holiday party by packing a healthy choice. This could even mean slipping a luna bar in your purse. I may  have even broke off pieces of a Luna bar during Christmas Eve church services last year...

Healthy Tip #10: Enjoy Yourself
The most important tip of all is to enjoy yourself today. Do not beat yourself up for having a cupcake. Try not to allow the holidays to feel like a time in which you have to enter the "danger-zone." It is ok to eat outside your house, where you have far less control. In fact, it is even an essential aspect of living a healthy life. Just come up with a game plan before you go to your party and stick with it. Remember that no one wants/needs to  hear about it. Instead, focus all of your time and energy on celebrating the present moment.

Make it Mondays: Mini Pumpkin Cake Loaves with Maple Sugar Glaze

Its Make it Mondays and in honor of Christmas, I am covering a recipe that can be served in ramekins on breakfast morning, be given as a very thoughtful last-minute gift,
 and is just sweet enough to be served as a dessert for Christmas dinner.




The mini loaf is much more cake- like then bread. It can be eaten with a spoon and has hints of pumpkin spice that gives it that delicious winter-comfort feeling. It is definitely most delicious when served warm. *When reserving, wrap bread in heavy foil and reheat in the oven at 350 for 15 min.
 
The maple sugar glaze gives the pumpkin cake that rich, winter-comfort feeling that makes it feel "homey." This icing can be whipped up with just 2 common ingredients in your house and can be used on nearly anything. From pancakes to dipped in pretzels, it is sure to taste delicious.
This recipe can also be used to make delicious muffins you can serve on Christmas morning...



It can also be packaged in mini bread loaf aluminum container that you can get at your local grocery store for packs of 3 for under $2. These containers can be personally gift-wrapped and given as a great little gift for a holiday party.

You can even add a cute card with a clever message to go with it...

Friday Favorites: Holiday Gift edition

Can you believe it's already that time where we are considered  "late on on Christmas shopping?" It seems like I just yesterday I was  planning out my meal plan for Thanksgiving. And don't even mention that I will soon have to get used to writing the date 2014, just as "2013" was starting to register. But one thing I'm not quite sick of hearing are "corny" Christmas jokes, so my apologies if you are...

But in all seriousness, I have selected 12 of the best gifts around. They are easy to pick up at stores such as Target and CVS or very easy to make at home. From your dad to your bestie, I have definitely covered something for everyone on your list. So follow my guide  below and you'll avoid having to spend your  whole weekend completely dedicated to waiting in long lines. I don't know about you all, but I plan on spending my Saturday seeing Anchorman 2 rather than trying to find a parking space at the mall.

Thrifty Thursdays: A Last Minute DIY Holiday Gift Idea


Lately I've been obsessed with mason jars. I drink from them...

I store my homemade almond butter in them...
Mix ingredients in food processor,
 slowly adding in olive oil until smooth & creamy.
And I even hand out my "Make it Monday" Red Velvet Cupcakes in them...

So needless to say when I was brainstorming what kind of holiday gifts to make this year, I knew I wanted to somehow incorporate the good ol' mason jar.

And not to mention... when I went to Target last weekend, there was a wide variety of all different shapes, sizes, and colors of mason jars to choose from-all on sale! So I grabbed a shopping cart (of course the one with the squeaky wheel) and went wild.



Below is a delicious homemade granola recipe, perfect for giving out as gifts in mason jars this holiday season. The granola will make your whole house smell absolutely delicious, and believe it or not, it tastes even better than it smells- I've been putting it on top of my yogurt all week. So without further ado...


Everyone loves granola, especially homemade. So this is a great gift for everyone from your hair dresser to child's teacher. Hand it out  this holiday season or as a "just because" gift anytime.

I even keep a mason jar of the granola with a blank gift tie in my purse, just in case I run into anyone that day.  Below is a mason jar assembly tutorial, along with a thrifty tip on how to make a scooper from a jug.


Scooper Tutorial: Cut the top part of the handle. Then cut along side edges of your plastic jug.

Make it Mondays: Red Velvet Cupcakes with Cream Cheese Frosting

Recently, the Make-It-Monday series has featured a lot of dessert recipes. To me, the holidays revolves around baking. I am often giving baked goods for holiday gifts, and it is definitely my "go to" with what to make for holiday parties.                                                                          

Tomorrow is my mom's office, holiday party and  her staff has requested that I bake something for it. And since they had specifically requested a dessert, I knew that I couldn't bake just the standard batch of cookies, I had to bring my A-game. I began brainstorming creative holiday recipes and, as such, I decided to head over to Pinterest in search of inspiration..


Once on Pinterest,  I clicked on to "My recipe Index" board and looked back at desserts I had pinned. Suddenly, I  came across a DIY dessert idea I had pinned for my friend Kim's wedding. A bride and groom had given take-home desserts stored in mason jars as party favors.                            
I loved the idea of personalizing each dessert by giving each guest mason jars to take home with them. And so I headed out to Target, where I found 12- 8 oz. Bell Jars on sale for $7.19

Now that I had determined how I should my serve my dessert, I still needed to figure out what I  was going to bake. I knew that I wanted my dessert to feel festive, and so I decided that I needed to incorporate the color red somehow. That's when I thought of Red Velvet Cupcakes...

And I have to say they are out of control! The secret is definitely using a little sour cream in both the cupcake and frosting recipes. Below you will find the red velvet cupcake and cream cheese frosting recipes, along with a step-by-step tutorial for assembling the cupcakes in the mason jars.

Make it Mondays: Sea Salt Caramel Stuffed Snickerdoodles

The moment for me when in which it starts to feel like Christmas has nothing to do with the time in which Christmas commercials begin debuting on TV,or when the lights go up on the neighboring houses, or  even when the Santa pictures begin  at the mall. But rather it finally feels like Christmas to me when my family takes out the boxes of ornaments and decorates our tree.

As a child, I remember placing a significant meaning behind going to pick out our tree. It meant that I was the brink of a couple of exciting weeks ahead. Picking up the tree felt like finally cutting the ribbon for a store opening. I could now "head on in" to the holiday season. When the tree was decorated, I knew I would soon start school vacation, which meant flying to Indiana to spend Christmas with my mom's whole side of the family.
Each year, someone is chosen as the person responsible for handing out our gifts. My mom is wearing the Santa hat in the right corner , because that happened to be her year in which she was chosen. The couples along the far left are the married "kids" of the family.
I remember one year in particular in which we set out to get our tree.  I was roughly 8 years old and I was sitting in the back seat of my mom's car on a drizzly and particularly cold December night. We had just picked out our tree at a local tree farm, and I had insisted on getting the more "mangled" tree in the back of the lot because I was worried that no one would want to buy it. On the way home, we pulled up to the gas station and my mom ran into the mini-mart, as my dad pumped our gas. As she got back in the car, I could tell by the smack of her lips that she was chewing on a candy.  She placed her seatbelt on and leaned over the back of her seat to hand me a Rolo. I wondered what this unfamiliar candy was and if I would like the taste of it. Well, it turns out... I did. And from then on, each year I would make sure to get a roll of Rolos for our car ride home to get our tree. Rolos became a snack, in which I only consumed during the holidays.

For my mom, her holiday snack of choice was Snickerdoodles. My grandmother knew this and so when we would fly there for Christmas, she would have a fresh batch of Snickerdoodles laid out upon our arrival.

 This is the first year I will not be going to Indiana along with my mom and so I decided to try and bake the Snickerdoodles at home in Boston. As I searched for a Snickerdoodle recipe, it occurred to me that I could combine the two holiday traditions..why not combine the Boston holiday tradition of Rolos with the Indiana holiday tradition of Snickerdoodles? And so I did...and believe me, you're welcome! 

This year, I encourage you to create a tradition that makes you feel like the holiday season is upon you. And if you choose to make these cookies as part of your holiday traditions, I would be more than honored to have my recipe included in your kitchens.
