Make it Mondays: Quinoa Stuffed Acorn Squash

It feels like acorn squash has been displayed on-sale at the grocery store since October. As a result, I have made a lot of recipes that have starred this hearty vegetable throughout these last few months. Two in which I've featured On the blog: roasted sweet potato and acorn squash soup & acorn squash french fries...


 So when I bought yet another on-sale, acorn squash this week at the grocery store, I realized it was about time I switch things up with a new recipe. I decided to get fancy...why not feature the acorn squash as the "bowl" component for the meal?

The acorn squash bowls take maybe 5 extra minutes to make, yet make a typical meal of quinoa so much more savory and a whole fancier. 

This is a great dish to serve at a dinner party or simply as a delicious lunch for yourself. And the great thing about working with quinoa is that you can add anything to it. You can experiment with different flavors of quinoa, add turkey sausage, apple slices... the skies the limit. So without further ado, here is your "fancy", yet easy recipe for quinoa stuffed acorn squash.

  • 2  medium acorn squash
  • 1/3 c. cooked quinoa
  • 1 1/2 tsp. 
  •  olive oil
  • 1 tsp. ground cumin
  • 1/2 tsp. sea salt
  • 1/2 c. chopped onion
  • 3 garlic cloves, minced
  • 2 1/2 tsp. minced fresh ginger
  • 3/4 c. shredded cheddar cheese
  • 1 tbsp. chopped walnuts (toasted)
 Preheat the oven to 375 degrees. Cut squash in half horizontally and remove the seeds with an ice cream scoop. Place squash  on a baking sheet & drizzle with olive oil & sea salt. Bake for 25 minutes, or until a sharp knife easily pierces squash.

 Meanwhile, cook the quinoa according to box directions. Heat oil in a large nonstick skillet over medium heat. Add onion and sauté for 4 minutes. Add cumin, garlic , and salt. Cook 2 minutes; stir in quinoa.

 Transfer squash halves to a dry baking dish, cut side up. Pack each with an even amount of filling and bake 20 minutes. Press shredded cheese into each filled half and bake 5 minutes more, or until cheese has just melted. Top with toasted walnuts.

Thrifty Thursdays: DIY Valentines



It's the day before Valentine's Day which means CVS and every other drug-store in the nation is preparing themselves for a "Black Friday" type of atmosphere tomorrow. But I have created the most adorable homemade Valentine's for you to make. And I bet you already have the supplies at your house to make them...

In my opinion, there is no better way to show your love then with a homemade gift. I also think that Goldfish and Swedish fish make great allergy-safe snacks for classrooms.

Colin was so excited to give the gift to his mom. Despite his fondness for swedish fish, he waited for "Mama" to open the bag. Now that's true love...

Make It Mondays: Sweet Potato, Turkey Bacon, and Avocado Hash

This dish is my kind of breakfast. It reminds me of waking up late on the weekends in college and headed to the local diner for some eggs & homefries. Yet, this dish is very different in that, it doesn't leave me feeling sluggish and ready to curl back in bed for the remainder of the day. 

By roasting the sweet potatoes prior to throwing them in the skillet with everything else, it gives them that hard outer crispiness (while still remaining soft and moist on the inside) of a home fry that’s difficult to imitate. And adding the avocado on top at the end, well that’s just a straight-up game-changer.

Here is what I used: 


  • 4 slices of turkey bacon 
  • 1 large sweet potato
  • 1 tsp. of olive oil
  • 1 avocado
  • 1/2 yellow onion 
  • sprinkle of cayenne pepper
  • sprinkle of sea salt
  • 1/4 tsp. garlic powder 
  • 1/2 tsp. onion powder 
Dice the sweet potato & throw it in a ziplock bag with olive oil & seasalt. Shake out the sweet potato mixture onto an lined baking sheet & roast for 20 minutes at 425 (flipping halfway).


In a skillet, cook up the turkey bacon until slightly browned. Remove bacon from skillet & pat dry. (Do not toss your bacon drippings though!)

Cook the onion in the bacon drippings for roughly 3 minutes on low heat. Turn up the stove to medium-high and toss in the roasted sweet potatoes. Add in all of your seasonings.

Pour the sweet potato mixture into the bowl and top with your turkey bacon (crumbled) and fresh avocado. Season to taste and enjoy!

As Heather mentioned in her post for last week’s Make it Mondays featuring the Clothes Make the Girl's Chocolate Chili, we have embarked on the Whole 30 Journey. This is my second time following the program and Heather’s first and I have to say it’s been nice this time around having someone to talk to about it each day. In addition, it certainly doesn’t hurt to have two people on the lookout for delicious Whole-30 recipes to make our palettes a little more excited.

After I cooked up this sweet potato hash scramble, I ran to my phone to text Heather. I snapped picture after picture and described the richness of the avocado mixed with the crunch of the onion & spicy-sweetness combo of the sweet potato.

This is definitely the type of recipe that you can easily store for the week (if you can make it last that long). Just store the potato mixture in a tupperware container and cook it up with eggs in the morning, enjoy it as your side with a turkey burger, or even throw it in a chicken dish. 

I know that even after my Whole 30 program is complete, I will still continue to add this to my weekly meals.

Friday Favorites-Fashion edition: the Sail Loft

Today's Friday Favorites features the Sail Loft, a clothing boutique that provides a unique blend of technical sailing outerwear, preppy outfitting, and women's boutique fashion. In other words, there is definitely something for everyone to chose from. I have included a few of my favorite looks below. But first, I want to introduce you to Rob Noe and Peter Mugford, the owners of this incredible store.

Highschool friends, Robert Noe and Peter (PJ) Mugford began selling a variety of novelty t-shirts to college students in 2007. PJ and I went to Union College together, where he was synonymous for selling t-shirts out of his backpack. Whether by offering "Rack Em" tees to nearby students in the cafe, or pacing on the phone with a client outside the library, PJ was always quite the entrepreneur. Quickly, he and Robert, who had also been actively selling tshirts as a freshman at UMass Lowell, had received so much recognition for their tshirts that they launched "Rack 'Em Tees", an online store in order to their orders across the nation. Soon Rob and PJ's business began to pick up serious momentum and by the following year, PJ and Rob received an offer to buy out their "Rack Em" online business. Rather than sell the company and live comfortably like many sophomores in college may have done, PJ and Rob accepted the offer and instantly moved on to their next project, Custom Universe. Custom Universe began as an online store that offered high-end, Patagonia jackets and sweatshirts, embroidered with college logos.  The school apparel became a huge hit in college bookstores across the nation.

With the success of Custom U, PJ and Rob allocated the funds necessary to open an apparel store for men called the Sail Loft in 2011 in the heart of Nantucket. Two summers later, they opened Her Sail Loft, a women's apparel store, next-door.

Anchoring on the Main Land

In December 2013, Rob and PJ took the Sail Loft to the mainlands, opening a third location in Chestnut Hill Square.  The new boutique combines the best of the two Nantucket originals  (The Sail Loft and Her Sail Loft).  Sail Loft  Chestnut Hill features timeless, nautical and contemporary styles with a true New England twist. As someone who is not a huge fan of preppy clothing, I was delightfully surprised to find many, many options that I fell in love with. Each time I made my way back to the dressing room, I found yet another option that I just had to grab. You can stop in for a spin class at Soul Cycle, grab a latte at Starbucks, dine at Seasons 52, shop at Sail Loft, and end with some Red Mango ice cream.

Make It Mondays: Heather's Chicken Curry

Today's Make it Mondays is by Heather Rose, Creatively Lu's new weekly contributor. Heather has provided us with her delicious take on an Indian Chicken curry recipe, with a recipe to make your own Naan to follow:

Inspiration for dinner can come from anywhere. This dish was a result of movie night with my husband. We were watching Life of Pi (excellent movie may I add) and I saw Pi and his family eating curry with Naan. I literally started drooling thinking about the amazing Indian food I had back in college after my late night accounting classes. 

When my friend first suggested it, I was pretty skeptical. I'm a meat and potatoes kind of gal. I didn't even know what curry was before college. But after my first bite I was hooked. Nothing beats a delicious curry with some yummy Naan. Unfortunately, now that I'm out of the city -- Indian restaurants are hard to come by. Or they just don't have that savory & spicy quality as those authentic restaurant served so well.

And so I decided to make my own take on the Indian classic! I've tried many recipes and I'm telling you - this one is GOOD. Give it a try, I promise you will not be disappointed. Forewarning - this curry is pretty spicy - you can turn down the heat by decreasing the amount of cayenne or add more if you think it's not spicy enough. Remember it's always easy to add more to a dish -- once it's in, there's no taking it out! 

Needed: 2 lbs chicken tenders or breast, 2 teaspoons salt,1/2 cup oil, 1 1/2 cups chopped onion, 1 tablespoon minced garlic, 1 1/2 teaspoons minced fresh ginger root, 1 tablespoon garam masala, 1 tablespoon curry powder, 1 tablespoon ground cumin, 1 teaspoon ground turmeric, 1 teaspoon ground coriander, 1 teaspoon cayenne pepper, 1 tablespoon water, 1 (15 ounce) can diced tomatoes, 1 cup plain Greek yogurt, 1 teaspoon salt,1/2 cup water, 2 tablespoons chopped fresh cilantro

Heat olive oil in large skillet and season chicken with salt. When oil is hot - cook chicken until outsides are browned. Aprox 2-3 minutes each side. When chicken is browned drain it on paper towels and set aside. Reduce the heat to medium-high; in the same pan add the diced onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture. 


Mix the tomatoes, yogurt, 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate. Pour 1/2 cup water into the mixture; bring to a boil, turning the chicken to coat with the sauce. Sprinkle the garam masala and 1 tablespoon cilantro over the chicken.Cover the skillet and simmer for 20-30 mins until chicken is is full cooked. 


I chose to serve the Chicken Curry with Naan and rice. I love using a delicious piece of Naan to scoop up the savory chicken.  The combination of the sweet, warm bread with spicy chicken brings me back to those late night dinners in Boston.

And while you can serve the Chicken Curry alongside some store-bought Naan, I have included a homemade Naan recipe that I swear by. After all, there is nothing better than the homemade version: 

Printer-Friendly Recipe
Needed: 1 (.25 ounce) package active dry yeast,1 cup warm water,1/4 cup  white sugar, 3 tablespoons milk, 1 egg (beaten),2 teaspoons salt, 4 1/2 cups all-purpose flour, 2 teaspoons minced garlic (optional),1/4 cup butter (melted)


In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. 


Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.


Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes. During the second rising, preheat grill to high heat.


At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. 
Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

Friday Favorites: January's Friday Five

I absolutely love my Friday Favorites posts and I can't begin to tell you how wonderful it has been to feature, interview, and meet some pretty fabulous people. As a result, the majority of my "Friday Favorites" posts will continue to   showcase interviews with my favorite stores, companies, authors, bloggers.. and all other types of people I adore. In fact, I am very excited to share with you the "Friday Favorites" I have lined up in the weeks to come. I mean, can we just take a second to talk about the upcoming "Friday Favorites" post on  Kym Douglas, Ellen, and the Oscars in March! 

Now that I have gotten that off my chest, I wanted to announce a new "Friday Favorite" series called "Friday Five" where once a month, I will feature the 5 current products & things that I can't get enough of for that particular month. So let's get January's "Friday Five" on a roll...


1. Ashley Sofia's Love & Fury CD

You may remember Ashley as my very first "Friday Favorite". Well, Ashley's debut CD has officially become available on iTunes, as of late last night; and I have to tell you, it's pretty amazing! This is that magical CD you can keep in your car on replay, without skipping  over any tracks.

2. Apple-MacBook Air & Etsy-Case
I recently got the Mac Air and absolutely love it! I have definitely noticed a significant difference in the resolution quality when designing the website, making photos, etc. Definitely is a blogger's dream! The laptop weighs just 2 lbs, making it the perfect travel companion for flying to Indiana. I certainly do not feel like I am missing out on not having a cd compartment, as all of the programs & apps come pre-installed. The adorable case in which I store my laptop in is from Etsy. I call it my "meeting clutch". 

3. Madewell Jacket 
I don't think I've ever been to Indy & not gone shopping with my cousin Kristin while there. During our second shopping adventure of my trip (the first day we went straight to the mall from the airport), I fell in love with the store Madewell. I found this amazing jacket on the clearance rack for $65 & I know that it will be a staple, prized possession in my closet for many years to come. Hopefully February's "Friday Five" can include some kick-butt pants & sparky jewelry to pair with it. 

4. Frozen...yup the Disney Movie!
My cousin and I, who are two grown adults, went to go see this movie at 1pm on MLK day (when kids had the day off from school).  Needless to say, we were the only people in the movie theater without kids. I hesitantly waited for the movie to start thinking a movie rated higher than G may have been a better choice. But from the first moment i started, I was captivated. My feet tapped along as I listened to the song "performances" and found myself sitting at the edge of my seat when the castle did in fact become "frozen". And you better believe I clapped along with the 6 year old sitting next to me when the credits rolled.   
But don't just take my word for it, go out and see the movie for yourself! The songs remind me of the ones from Broadway play "Wicked", and Kristen Bell gives Kristen Chenoworth a run for her money as the cutest princess on the block (even if it is just her voice in the movie). 
5. 1-inch Curling Iron
While in Indiana, my cousin curled my hair one day with her 1-inch curling iron. I was genuinely shocked by just how much longer my hair looked than normal  (hey, I'll take every inch I can get). Typically, I use a 2 inch barrel & while I love the look of my hair curled, it's tough to have to see it "shrink" before my eyes. Therefore, when I got home, I ran out and bought a 1-inch curling iron for myself. This little baby has definitely been added to my daily routine. 

...Kind of a random bunch of favorite things, but then again that's how the Creatively Lu blog, in general, rolls. A random assortment of thoughts that all comes together to create a beautiful and more fulfilling life!

Thrifty Thursdays: Workout Gear Deals




Today's Thrifty Thursday post is brought to you by one of my very best friends, Heather Rose. Heather and I have been friends since 8th grade and while the old days of cruising around the mall with my mom's spare keys jangling from my hand so that people would think we could drive have changed to cruising around the children's museum with her 16 month year old Miss Maddie May, we have still remained inseparable.  Heather is an amazing mom, wife, as well as an amazing cook, DIYer, and is a frequenter of the local farmer's markets in her area. Heather is someone I turn to for every lifestyle question from how to boil quinoa to a DIY house project. Therefore, I am very excited to announce that Heather is now a weekly writer for Creatively Lu, writing either a delicious Make it Monday recipe or sharing helpful, Thrifty Thursday tips.

There are lots of exciting things going on with the Creatively Lu blog and I look forward to updating you all throughout the next couple of weeks. But without further ado, here is Heather with some thrifty workout gear finds:

Hey guys! We are starting to wrap up January and most of us are in full swing of our New Year’s resolutions. (Check out the Creatively Lu Vision board DIY tutorial as a great way to stay motivated all year). One of mine,  was to exercise more frequently. Being a stay-at-home to a 16 month old with a husband who doesn’t walk in the door most nights until 8PM, I knew this was going to be a challenge. However, I’ve managed to sneak in my exercise here and there. Trying to make it work….. am I right? 
One day I was able to go to my old gym and attend one of my favorite classes with my neighbor. I was so pumped to be out in public, being able to work out without worrying if my toddler was going to set my house on fire or trying to read Jillian Michael lips because I had to mute the DVD for fear that Jillian's screaming tasks would wake my napping child. And so it felt good to attend an exercise class outside of the house. Yet after 20 minutes, I began to  observe the class members around me. The room was filled with woman who were looking pretty awesome with their chic gym hair styles, expensive yoga pants, and stripy shirts. During a water break, I took a second to observe my workout attire. There I was, wearing a frumpy t-shirt showcasing a stain (or two) on it, as well as wearing a pair of worn yoga pants. At least the T-shirt was from a half-marathon I ran so I made sure to puff up my chest a little more  so that the words  "BOSTON’S RUN TO REMEMBER ½ MARATHON" would be shown, with hopes that no one would bother to read the bottom stating the year 2011. 
 I suddenly looked at myself in the mirror and wanted to hide. At home I thought I looked decent enough. It’s the gym after all, not the Oscars. But here with all these women who looked amazing in their cool fun clothes, I felt like a straight up slob. When you work out, you want to feel good. The rest of the time I spent at the gym, I was straight up uncomfortable. My shirt was flopping all over the place. I’m pretty sure you could see through my pants they were so worn (I also go to the front of the class so I’m pretty sure I offended some people. Sorry.) I needed a workout makeover ASAP.

  I grabbed my laptop as soon as I got home to order some new workout clothes. I almost choked on my daughter's cheerios I had been snacking on from her snack cup, when I looked up the price of pants from a popular yoga clothing boutique. A pair of normal looking running capris cost $150. I died. I had been hoping to get a whole outfit for that price. After all, I'm pretty sure that you can look awesome at the gym without having to rob my daughter's college fund. I’m always freezing when I’m in a studio waiting for a class to start. I appreciate that the rooms are a little cooler so we stay comfortable during class,  however, I always like wearing something to cover my arms while I warm up.
