Make it Mondays: Quinoa Stuffed Acorn Squash

It feels like acorn squash has been displayed on-sale at the grocery store since October. As a result, I have made a lot of recipes that have starred this hearty vegetable throughout these last few months. Two in which I've featured On the blog: roasted sweet potato and acorn squash soup & acorn squash french fries...


 So when I bought yet another on-sale, acorn squash this week at the grocery store, I realized it was about time I switch things up with a new recipe. I decided to get fancy...why not feature the acorn squash as the "bowl" component for the meal?

The acorn squash bowls take maybe 5 extra minutes to make, yet make a typical meal of quinoa so much more savory and a whole fancier. 

This is a great dish to serve at a dinner party or simply as a delicious lunch for yourself. And the great thing about working with quinoa is that you can add anything to it. You can experiment with different flavors of quinoa, add turkey sausage, apple slices... the skies the limit. So without further ado, here is your "fancy", yet easy recipe for quinoa stuffed acorn squash.

  • 2  medium acorn squash
  • 1/3 c. cooked quinoa
  • 1 1/2 tsp. 
  •  olive oil
  • 1 tsp. ground cumin
  • 1/2 tsp. sea salt
  • 1/2 c. chopped onion
  • 3 garlic cloves, minced
  • 2 1/2 tsp. minced fresh ginger
  • 3/4 c. shredded cheddar cheese
  • 1 tbsp. chopped walnuts (toasted)
 Preheat the oven to 375 degrees. Cut squash in half horizontally and remove the seeds with an ice cream scoop. Place squash  on a baking sheet & drizzle with olive oil & sea salt. Bake for 25 minutes, or until a sharp knife easily pierces squash.

 Meanwhile, cook the quinoa according to box directions. Heat oil in a large nonstick skillet over medium heat. Add onion and sauté for 4 minutes. Add cumin, garlic , and salt. Cook 2 minutes; stir in quinoa.

 Transfer squash halves to a dry baking dish, cut side up. Pack each with an even amount of filling and bake 20 minutes. Press shredded cheese into each filled half and bake 5 minutes more, or until cheese has just melted. Top with toasted walnuts.

Friday Favorites: Wear Love




Today, I am excited to feature the very special company, wearLove®, which is right out of my home base of Easton MA. wearLove® is much more than another clothing company. Rather, it is a lifestyle brand that has devoted itself to spreading the beautiful message to "wear love" everyday. And with today being Valentine's Day, I can't think of a better company to feature .

The company was created as a movement to spread the two special words; "wear love". Founder, Lynne Payne, had been working on a photo shoot with her friend when they decided to print the words "wear love" on t-shirts for the shoot. Soon, people began inquiring about the shirts in the photos and so Lynne began selling the t-shirts out of her home in Easton. Within weeks, she began receiving orders from  people across the world who were eager to adorn the loving message.




As word of mouth spread, incredible stories began to unfold across the web of how people were "wearing the love". One, in particular, involved a father returning from the war who wore his wearLove® t-shirt to greet his wife and children for homecoming.

A few weeks later, Lynne received another message from someone who wanted to "wear the love". It was the Today Show alerting Lynne that  Kathie Lee would be featuinrg Wear Love® as her "favorite thing" that morning. (Check out the Today Show clip here. Within minutes of shirts airing on the Today Show, Lynne's website sold out of inventory.

Since then, the company has re-stocked and has created many different designs and styles to choose from. While meeting with Lynne, I had the pleasure to tour her workroom and it was incredible to get a first eye experience of Lynne's creative process. One of my best friend Kelsey always says to me "when you love what you do, you never work a day in your life" and this is immediately what I thought of when watching Lynne discuss her passion for wearLove®. She is so authentic in spreading her message to "wear love" that  it is no surprise to me how quickly the company has become a success.

Another huge reason as to why I am a big fan of wearLove® is due to all of the philanthropic work they do. A few years back, Lynne and her husband traveled to one of the poorest communities in Africa and were humbled by what they saw. An estimated 30,000 boys in Sengal are abandoned by their families at age 5, where they are placed into schools until the age of 15. Somewhere around age 15, after a lost decade of use and abuse by their street masters, the boys are once again abandoned to a future without hope and promise.

wearLove® has helped to build a vocational school for these boys in which they can build life skills that can combat poverty. In my opinion, there is no better way to give back then to encourage others to find their strengths. I firmly believe in the saying; "Give a man a fish and you feed him for the day, teach a man to fish and you feed him for a lifetime". By building a school for the children of Senegal, wearLove® was able to inspire the children to create a sense of self-love and empowerment from within themselves. To this day, wear Love® continues to support the children of Senegal, and other impoverished nations, by donating  $3 of every shirt to Restore International, a worldwide organization committed to restoring justice to children around the world by

In addition to partnering with Restore International, wearLove® has  partnered with numerous other philanthropic organizations including School on Wheels, a nonprofit for children experiencing homelessness in Massachusetts, and the Adam Brown Legacy Fund, a nonprofit that was formed in honor of fallen Navy Seal Chief (SOC) Adam Brown.

Lastly, wearLove® makes t-shirts for everyone and I'm really not just saying that. They seriously have a style that fits anyone I can think of in my life. From making tshirts for Jenna's (Tone it Tuesday contributor) little man Henry to being my mom's "go-to" t-shirt company and the designers of my favorite, lightweight hoodie, wear Love® is certainly worn and loved by all.

You can't help but feel that you are a part of a much larger, loving community when wearing their apparel. Even just by going to yoga class in my favorite wearLove® pullover, I feel as though I am setting a loving intention for the class and inspiring others to do the same.

Today's Wordless Wednesday photo features a moment from Jaclyn Tillinghast's recent trip to Haiti. The kids were learning to braid and Jaclyn sweetly agreed to be their test model. Jaclyn traveled to Haiti with her church, Church of Emanuel Christian & Missonary Alliance located in Foxborough, MA last week. She, along with a team of 7 other church members, were on a mission trip to rebuild houses.

Make It Mondays: Sweet Potato, Turkey Bacon, and Avocado Hash

This dish is my kind of breakfast. It reminds me of waking up late on the weekends in college and headed to the local diner for some eggs & homefries. Yet, this dish is very different in that, it doesn't leave me feeling sluggish and ready to curl back in bed for the remainder of the day. 

By roasting the sweet potatoes prior to throwing them in the skillet with everything else, it gives them that hard outer crispiness (while still remaining soft and moist on the inside) of a home fry that’s difficult to imitate. And adding the avocado on top at the end, well that’s just a straight-up game-changer.

Here is what I used: 


  • 4 slices of turkey bacon 
  • 1 large sweet potato
  • 1 tsp. of olive oil
  • 1 avocado
  • 1/2 yellow onion 
  • sprinkle of cayenne pepper
  • sprinkle of sea salt
  • 1/4 tsp. garlic powder 
  • 1/2 tsp. onion powder 
Dice the sweet potato & throw it in a ziplock bag with olive oil & seasalt. Shake out the sweet potato mixture onto an lined baking sheet & roast for 20 minutes at 425 (flipping halfway).


In a skillet, cook up the turkey bacon until slightly browned. Remove bacon from skillet & pat dry. (Do not toss your bacon drippings though!)

Cook the onion in the bacon drippings for roughly 3 minutes on low heat. Turn up the stove to medium-high and toss in the roasted sweet potatoes. Add in all of your seasonings.

Pour the sweet potato mixture into the bowl and top with your turkey bacon (crumbled) and fresh avocado. Season to taste and enjoy!

As Heather mentioned in her post for last week’s Make it Mondays featuring the Clothes Make the Girl's Chocolate Chili, we have embarked on the Whole 30 Journey. This is my second time following the program and Heather’s first and I have to say it’s been nice this time around having someone to talk to about it each day. In addition, it certainly doesn’t hurt to have two people on the lookout for delicious Whole-30 recipes to make our palettes a little more excited.

After I cooked up this sweet potato hash scramble, I ran to my phone to text Heather. I snapped picture after picture and described the richness of the avocado mixed with the crunch of the onion & spicy-sweetness combo of the sweet potato.

This is definitely the type of recipe that you can easily store for the week (if you can make it last that long). Just store the potato mixture in a tupperware container and cook it up with eggs in the morning, enjoy it as your side with a turkey burger, or even throw it in a chicken dish. 

I know that even after my Whole 30 program is complete, I will still continue to add this to my weekly meals.

Make It Mondays: Heather's Chicken Curry

Today's Make it Mondays is by Heather Rose, Creatively Lu's new weekly contributor. Heather has provided us with her delicious take on an Indian Chicken curry recipe, with a recipe to make your own Naan to follow:

Inspiration for dinner can come from anywhere. This dish was a result of movie night with my husband. We were watching Life of Pi (excellent movie may I add) and I saw Pi and his family eating curry with Naan. I literally started drooling thinking about the amazing Indian food I had back in college after my late night accounting classes. 

When my friend first suggested it, I was pretty skeptical. I'm a meat and potatoes kind of gal. I didn't even know what curry was before college. But after my first bite I was hooked. Nothing beats a delicious curry with some yummy Naan. Unfortunately, now that I'm out of the city -- Indian restaurants are hard to come by. Or they just don't have that savory & spicy quality as those authentic restaurant served so well.

And so I decided to make my own take on the Indian classic! I've tried many recipes and I'm telling you - this one is GOOD. Give it a try, I promise you will not be disappointed. Forewarning - this curry is pretty spicy - you can turn down the heat by decreasing the amount of cayenne or add more if you think it's not spicy enough. Remember it's always easy to add more to a dish -- once it's in, there's no taking it out! 

Needed: 2 lbs chicken tenders or breast, 2 teaspoons salt,1/2 cup oil, 1 1/2 cups chopped onion, 1 tablespoon minced garlic, 1 1/2 teaspoons minced fresh ginger root, 1 tablespoon garam masala, 1 tablespoon curry powder, 1 tablespoon ground cumin, 1 teaspoon ground turmeric, 1 teaspoon ground coriander, 1 teaspoon cayenne pepper, 1 tablespoon water, 1 (15 ounce) can diced tomatoes, 1 cup plain Greek yogurt, 1 teaspoon salt,1/2 cup water, 2 tablespoons chopped fresh cilantro

Heat olive oil in large skillet and season chicken with salt. When oil is hot - cook chicken until outsides are browned. Aprox 2-3 minutes each side. When chicken is browned drain it on paper towels and set aside. Reduce the heat to medium-high; in the same pan add the diced onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture. 


Mix the tomatoes, yogurt, 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate. Pour 1/2 cup water into the mixture; bring to a boil, turning the chicken to coat with the sauce. Sprinkle the garam masala and 1 tablespoon cilantro over the chicken.Cover the skillet and simmer for 20-30 mins until chicken is is full cooked. 


I chose to serve the Chicken Curry with Naan and rice. I love using a delicious piece of Naan to scoop up the savory chicken.  The combination of the sweet, warm bread with spicy chicken brings me back to those late night dinners in Boston.

And while you can serve the Chicken Curry alongside some store-bought Naan, I have included a homemade Naan recipe that I swear by. After all, there is nothing better than the homemade version: 

Printer-Friendly Recipe
Needed: 1 (.25 ounce) package active dry yeast,1 cup warm water,1/4 cup  white sugar, 3 tablespoons milk, 1 egg (beaten),2 teaspoons salt, 4 1/2 cups all-purpose flour, 2 teaspoons minced garlic (optional),1/4 cup butter (melted)


In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. 


Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.


Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes. During the second rising, preheat grill to high heat.


At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. 
Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

Make It Mondays: Crockpot Chicken Philly Cheesesteak Subs


Recently, my friend Lauren went to Philadelphia for the weekend. When she returned, she described to me in detail the ooey-gooey, deliciousness of the Philly Cheesesteak that she enjoyed while visiting there. And so I found myself with a serious case of food envy. And unfortunately, I'm not headed to Philly any time soon.

  I knew that there was only one way to kill this food craving. I would have to re-create that classic Philly Cheesesteak for myself... in my Boston kitchen. I wanted to pack this thing with the same major flavor as the original, while "healthifying" it a bit. That's when I came up with the idea to substitute the steak for chicken and throw in a can of beer. By cooking the chicken in the crockpot, the flavors could really set in.


I am a firm believer that little touches really do make a major difference between enjoying just an ordinary ol' dinner and experiencing a very special meal. The "extra touches" for this dish included finding a block of white cheddar cheese from the specialty cheese section of the grocery store and toasting the bread in the oven prior to serving. However, these final touches don't need to cost a lot of extra money. In fact, the white cheddar cheese was priced only $1 dollar than a grocery-store brand bag of shredded cheddar cheese.

Chicken Philly Cheese Steak, Makes 6 large subs

Ingredients:
  •  1 diced ,large yellow onion
  • 1 diced, yellow pepper
  • 1  diced, green pepper
  • 2 garlic cloves (minced)
  • 4 frozen boneless, skinless chicken breasts 
  • 2 t. paprika
  • 1 t. sea salt 
  • 1 t. pepper
  • 8 oz of your favorite beer 
  • 8 oz of freshly grated cheddar cheese 
  • 6 soft sub rolls
  • 1 T. melted butter
  • Sliced provolone cheese

Directions:
  1.  Mix together the paprika, sea salt, and pepper. Rub onto the chicken breasts and set aside.
  2. In the bottom of the crockpot, layer the onions and peppers. Add garlic evenly on top. Place chicken on top and pour a can of beer over the chicken. Cover and cook on low for 6-8 hours. 
  3. Prior to 15 minutes before serving, shred the chicken in the crockpot using a fork or tongs. Mix and toss the chicken together with the onions, peppers, and garlic. Cook for the additional 15 more minutes.
  4. Turn the crockpot to the warm or off setting. Stir in the grated white cheddar cheese and let sit for 5 minutes.
  5. To toast bread: Preheat oven to 400 degrees. Brush each sub roll with butter and layer with slices of provolone cheese. Place open sub rolls on a baking sheet and toast for 12 minutes (or until the cheese is browned and bubbly). 
  6. Place your Chicken mixture onto each toasted sub and add whatever condiments you like. (I like mine with banana peppers.)

I am really glad that I experimented with this recipe.The chicken was very flavorful, left the whole house smelling delicious, and was certainly a lot cheaper way of fulfilling my craving than the cost for a plane ticket to Philly.

Friday Favorites: Redefining Rich


Today’s Friday Favorites is dedicated to the Redefining Rich blog created by Ashley Klane last January as a New Year’s resolution to “redefine” her interpretation of what it meant to live a “rich” life. Below is a passage from her very first post in which she explained her prerogative for creating the blog:

 The idea for this year’s resolution came to me one night when I finally got sick of hearing myself complain about how broke I am. While it’s true that I’m pretty broke (along with almost everybody else my age), I realized that I was whining about it while eating wild salmon, inside my home, surrounded by some of the people I love most. I wanted to slap myself. I have always known that I am fortunate in infinite ways, but my first stab at being an adult and supporting myself got my views a little twisted. I needed to redefine “rich”. Sure, I may live off peanut butter and jelly sandwiches most nights, and I may or may not have let my brunette roots grow down to my ears, but I can eat, I have a job I love, and my 5 month old nephew gives me the biggest smile every single day when I get home from work. So I’m pretty sure I’m f*cking loaded.

And so came the idea for 2013. I want to stop complaining and start helping. As long as I have enough money to survive, I have enough money to help other people. So, this year I want to choose one charity per month to share with my family and friends, raise awareness for, and donate to. While I’ll personally only be able to donate a small amount, I like to believe that even small acts of kindness can create positive outcomes – people helping people, pay it forward, all that good stuff. I would like to admit that I don’t always believe money to be the best way to help. Whenever possible, I support volunteering, as actions speak louder than $$$. However, keeping in mind my goals to include my friends and family in this resolution and to choose a new charity every month, I felt a monetary donation would be an easy way to keep this resolution going. (I’ll also be sharing stories of volunteering and random acts of kindness to supplement throughout the year.)
I have a new nephew as I mentioned earlier, and any little thing I can do to make his world just a little bit better, I’ll find a way to do. My hope is that everyone following this has someone to inspire them, someone to be better for.

The Redefining Rich blog has delivered all that it has promised  and a heck of a whole lot more. Over this past year, Ashley has covered a diverse number of charities  including the DJ Henry Dream Fund, the Autism Research Foundation,  and School on Wheels of Massachusetts. Each month, Ashley shares quotes, pictures, heartfelt notes, and information on that particular month’s charity. Her posts are intimate and heartfelt, while leaving you feeling like you have just a little more love left to give that you may have not even  known you had, which is exactly how I feel when spending time with Ashley.

Ashley is one of my very best friends since moving to Easton at the tender age of 15. (Yup, I started high school in a new town!)   Even while growing up, Ashley never ceased to amaze me with her huge heart and endless dedication towards helping others. As much as it might have been tempting to partake in “gossiping with your bestie", I never engaged in such antics with Ashley since she never made you feel like there was any need to. 

While Ashley is always a very positive person, it is not in a "Richard Simmons, over-the-top" sorta way. Rather, Ashley is just so naturally blissful that the conversation never heads towards a negative place. My friend Jimmy always says “You are affected by the 5 people you surround yourself with the most” and I am so lucky that Ashley has been one of those 5.

Last year, during my full-time MBA program, Ashley moved back home and we literally became attached at the hip. With similar "school schedules" (Ash is a teacher), we shared after-school snacks, watched a ton of weekly TV shows such as the Voice, in which we rose from the couch to give standing ovations for our favorite singers, took weekly “field trips” to Hilliard's (our favorite, local ice cream parlor), and went on leisurely drives in Ashley's jeep, while listening to our favorite compilation of “chill” music (which included another one of my favorite Ashleys, Ashley Sofia).

During this stressful time, Ashley was my endless support system; providing rides to the doctors, advice on online shopping purchases, and never hesitated to get excited  over my weird "healthy hippie" food that no one else would dear try or ever refused to try my made-up beauty concoctions and recipes, despite how "strange" they may have been. So needless to say when Ashley told me one day over ice cream at Hilliard's, that she was planning to move to Los Angeles to live with Caitie (another high school best friend), I was in major denial.

 Fast-forward a few months later to her going away dinner and having to say goodbye. I felt like a complete and utter "hot mess." This was my best bud, who lived an easy 5 minutes away, and suddenly my normal routine was screeching to a sudden halt. But I took a deep breath and gave her a big hug goodbye, and told her; “go show LA how you kill it,” and begrudgingly walked away while miraculously remaining composed. However, the second I got to the car, I cried like the big, mushy baby I was.

It has now been 3 months since the big move and seriously not a thing has changed with my friendship with Ashley. I still get to catch up with her frequently, have received a “tour” of the new place via iPhone pictures, and continue to receive the same amount of endless support from her as always, its just now over the phone. In fact, Ashley is in part to thank for launching the Creatively Lu blog. 

 As I write my blog posts, I often think “This is something Ashley would love.” Remember that coconut DIY masque or the walnut streusel bread recipe or the gratitude journal entry?... Yup, all those posts I knew Ashley would, in her words; “ be all over.”

Ashley is an incredible role model, aunt (remember that “little bald guy” from my first Wordless Wednesday picture?), blogger, and teacher.  I am so thankful and lucky to call her my lifelong friend.
